Ultra high pop cap maps are a good time every now and then but i experience pretty serious frame rate issues once all those units are on the field and you're overhead watching them fight. If you're playing against the AI, or even another player there will be so much happening on the map and so many units present that your rig will not be able to handle it (mine includes an intel 4770k and SLi'd 670s although I'm sure the SLi part is hurting me).
I've played some maps with 1,000 and 10,000 with unlimited resources. However, i think 300 is probably the max any one map should have. I thoroughly enjoy the high pop cap maps that some users have created.
